Hello, I’m the Obstinate Bitch. This blog has many functions. I am a collector of recipes, regular and diet. I’m a collector of cookbooks. I inherited my Mother’s large collection of cookbooks when she died. I have her recipes which I treasure.
I started this site to put many of her recipes online and to upload a project she did. The Owen Elementary Pre-School Cookbook was a project she worked on for my Brother’s pre-school class. I will be creating another site for the Pre-School Cookbook. I think my Mother would get a kick out it. Taking her memeographed cookbook and modernizing it. lol
As time has gone on I’ve come to terms with the fact that I am a pre-diabetic and need to deal with what that means for my life. I’m in my late 40′s and would like to be around long enough to spoil grandkids and ship them back to their Father. Ahh Mom’s revenge!
At my heaviest I weighed 335 pounds after my son was born.
As of November 2011 I weighed 292. As of now I weigh 255. As of May 7, 2012 I weigh 235. I’m on a low-fat, low-carb, sugar-free diet. (Low carb and low fat is damned hard to do!)
I use the Wii for exercise. We don’t live in an area where you can get out and walk and the weather can be a pain so I do my exercise indoors. I use some of the basic exercises with wii fit but mainly I use “Walk It Out”. I’m averaging 4-5 miles a day walking with it. That’s a lot for a lazy assed obstinate bitch let me tell you! I also use Leslie Sansone Walk Away the Pounds DVds and EA Active 2 for the wii. I do basic exercises (crunches, etc, and I even manage to plank!), use a recumbent exercise bike, and I’ve recently started the Couch to 5k program.
My blood glucose levels started out around 120 to 130. My A1C at my May appt was normal. Down from 6.4.
I’ll also be using this site to track my weight loss journey and my attempt to lower my blood glucose levels using only diet and exercise. I want to make it clear I am NOT a food blogger. I have a point and shoot crap camera and really poor lighting. I might give it a shot once in awhile but I’m warning you my photos suck! You’ll find all kinds of recipes. Regular, diet, and cookies. I make lots of cookies for my Husband to take to work. I’m the cookie lady. So there will be cookie recipes!
